Roast the shallots and ginger on the stove until fragrant and slightly charred. Clean the chicken and place it in a pot with 2.5 liters of water, add the roasted shallots and ginger, star anise, cinnamon, and black pepper, bring to a boil, then reduce the heat and simmer for about 30 minutes.
💡 Tip: Skim off the foam regularly to keep the broth clear.

Remove the chicken, let it cool slightly, then shred or slice it into bite-sized pieces. Strain the broth through a sieve to remove any solids and spices.
