
12-Minute Spicy Tuna Kimchi Fried Rice After Work
There are days when you hesitate in front of the fridge after work. With well-fermented kimchi, a can of tuna, instant rice, and eggs, you can make a spicy and hearty fried rice in just 12 minutes. It only requires one pan, so there's less to clean, and if you reduce the gochujang for the kids, it's perfect for sharing.

Heat the instant rice in the microwave, then open the lid and let it cool for 1 minute. Chop the kimchi finely with scissors, lightly drain the tuna, and beat the eggs.
💡 Tip: If you chop the kimchi in advance on the weekend, you only need to take out the pan on weekdays. This saves 2 minutes.

In a pan, add cooking oil and green onion, and sauté over medium heat for 1 minute. Then add the kimchi, kimchi juice, tuna, and gochujang, and stir-fry for about 3 minutes.
💡 Tip: Sautéing the kimchi first softens the sourness and deepens the flavor of the fried rice. If it's too thick, add 1 tbsp of water.

Add the rice and press down with a spatula to evenly distribute the kimchi seasoning. Drizzle soy sauce around the edge of the pan and let it simmer for 10 seconds before mixing with the rice.
💡 Tip: Adding instant rice directly can make it soggy. Warmed and slightly cooled rice is the most stable for fried rice after work.

Push the fried rice to one side and pour the eggs into the empty space, gently stirring before mixing with the rice. Turn off the heat and sprinkle with sesame oil, seaweed flakes, and sesame seeds to finish.
