Slice the shiitake mushrooms, cut the tofu into small cubes, and cut the soaked kelp sprouts into sections.
💡 Tip: Do not soak the kelp sprouts for too long to avoid affecting the texture.

Add water to a pot, then add the shiitake mushrooms and chopped ginger. Bring to a boil over high heat, then reduce to low heat and simmer for 5 minutes.
💡 Tip: If you prefer a richer aroma, you can sauté the shiitake mushrooms and ginger in a little sesame oil first.

Add the tofu and kelp sprouts, and continue to cook for 3 minutes.
💡 Tip: Gently place the tofu in to avoid breaking it.
Turn off the heat, dissolve the miso paste in a small amount of hot water, pour it into the pot, and stir well.

Sprinkle with chopped scallions and drizzle with a little sesame oil (optional), then enjoy.
