
Namdo Aged Kimchi Chicken Stew
This is a chicken stew made with aged kimchi. The deep flavor of well-fermented kimchi seeps into the chicken, making it a great side dish for rice. It's even more delicious when eaten with potatoes.

Clean the chicken thoroughly, remove the blood, and marinate with half a tablespoon of soybean paste for 10 minutes. This helps to remove odors.

Cut the aged kimchi into bite-sized pieces, and chop the potatoes and onion into large pieces. Slice the green onion and Cheongyang chili pepper diagonally.

In a pot, add the chicken, aged kimchi, potatoes, onion, minced garlic, red pepper powder, soy sauce for soup, sugar, and pepper, then pour in water and bring to a boil.
